Blueberry Recipes


Blueberry Kuchen
You Need:
- 1/2 cup of butter (1 stick)
- 2/3 cup of sugar
- 1 egg
- 1 t. of vanilla
- 1/2t. of almond extract
- 1 & 1/4 cups of flour
- 1/2t. baking powder
- 1/4t. salt
- 2 cups of fresh or frozen blueberries
- 1 T. sugar
- 1/4 t. cinnamon
Directions:
1. Cream butter and sugar and beat in egg, vanilla and almond extract
2. Add flour, baking powder and salt and beat until well mixed
3. Chill batter 30 minutes
4. Preheat oven to 350° and butter a 9 or 10 inch tart pan, press butter into bottom and sides of pan
5. Mix blueberries with sugar and cinnamon
6. Fill tart shell, bake 40 minutes
7. Cool five minutes on wire rack, then remove tart pan rim
8. Cool completely before serving


Blueberry Cake
You Need:
- 4 eggs, separated
- 2 cups of sugar
- 1 cup of shortening
- 1/2 tsp of vanilla
- 2/3 of a cup milk
- 3 cups of sifted flour
- 2 tsp of baking powder
- 3 cups of blueberries
- Cinnamon
Directions:
1. Beat eggs whites until stiff; add about 1/4 cup sugar to them and set aside.
2. Cream shortening; add salt and vanilla to this, add remainder of sugar, then the egg yolk. Beat until light and creamy.
3. Sift baking powder and flour together.
4. Add alternately to creamed mixture and the 2/3 cup milk.
5. Fold in egg whites, then blueberries that have been dusted with flour.
6. Turn batter into a greased 9x13 pan.
7. Sprinkle top of batter with a little sugar and cinnamon. Bake at 350° for 50 minutes.
