The foliage, flower, and roots of this wild food are all edible. The foliage has less bitter taste before the plant flowers. However, foliage is healthy throughout the entire life cycle of the plant and is a nutrition powerhouse when added to the other greens of a fresh salad. Flowers can be cut up and prepared as a tasty fritter. The root can be cut length-wise, dried, and turned into a tea. This tea is of great health benefit to the gall bladder and liver. It helps rid the body of toxins than contribute to stones.
